
12 large Jalapenos cut in half using a well honed sharp knife and de-seeded (leave a few seeds if you like hot) with a spoon.
1 box of Philadelphia Cream Cheese
1 lb thin cut a good Bacon

Spoon the Cream Cheese into the Jalapeno half’s and wrap a strip of Bacon tightly around the half securing with a wooden tooth pick
Grill off direct coal heat for 10 minutes 15 minutes (Jalapeno will begin to soften a little) and then crisp the bacon directly over the coals (one two three ouch) turning to crisp all sides. A little char is good.
Eat immediately
Safety tip – Use plastic gloves to seed out the Jalapenos with the spoon and don’t touch your face. I learned the hard way. Hands burned for 4 hours.
